Breakfast Mexican-Style
Liven up your morning by throwing together this tasty mouth-tingling Mexican-inspired breakfast!

Ingredients
  • 100 g (4 oz) sliced chorizo
  • 1 corn tortilla
  • 1 egg
  • Butter or oil for frying the egg
For garnish
  • Diced avocado tossed in lime or lemon juice
  • Salsa
  • 3 or 4 chopped spring onions (scallions)
  • 50 g (2 oz) crumbled cheese
  • Chopped coriander (cilantro)
Instructions
  1. Heat the chorizo in a pan over a medium-low heat. Turn to ensure even cooking.
  2. Meanwhile warm the tortilla in a microwave or a warm oven. Fry the egg to your liking.
  3. Place the warmed tortilla on a plate. Arrange the chorizo on top and slide on the egg.
  4. Add the garnishes and Roberto's your uncle!
Titli's Tips
This breakfast is very quick to throw together if you have made the salsa and diced the avocado the night before. Any cheese will do for this recipe but cheddary cheeses and feta work particularly well.
