Chicken With Chorizo
Chicken with chorizo is a very simple and very very tasty dish that you can have for a mid-week supper. In this recipe I substitute chorizo with a halal garlic sausage.

Ingredients
  • 4 chicken legs with the thighs attached, deskinned
  • 1 onion, thinly sliced
  • 400 g (14 oz) tin of chopped tomatoes
  • 150 g (5 oz) halal garlic sausage, cut into about 1″ pieces
  • 3 cloves of garlic, chopped
  • 3 bay leaves
  • 2 tsp paprika
  • 4 tbsp olive oil
  • Salt
  • Pepper
Instructions
  1. Rub the chicken all over with the paprika and season with salt.
  2. Heat the olive oil in a pan and brown the chicken on both sides. Transfer the chicken pieces to a casserole dish.
  3. In the same pan, fry the onions for about 10 minutes until golden brown.
  4. Add the garlic and the halal sausage and fry for 2 minutes.
  5. Add in the tomatoes and the bay leaves and bring the mixture to the boil.
  6. Pour the tomato mixture over the chicken. Cover and bake in the oven at 190°C for 45 minutes.
  7. Sit down, kick back, watch some mindless drivel on the TV.
  8. Remove the dish from the oven, season with salt and pepper and return it to the oven for a further 10 minutes.
  9. Remove the bay leaves and serve with boiled potatoes.
Titli's Tips
You can prepare this dish the day before up until the point you bake it. Store it in the ‘fridge and bake it when you get home. For those people who choose to cook with alcohol, you can add 75 ml of a medium sherry into the tomato sauce.
