Deep Fried Cauliflower
Deep fried cauliflower is easy to prepare but to turn it into a delicious tapas you should serve it with a tomato and red pepper salsa!

For the dipping salsa

Instructions
- Heat the olive oil in a pan over a medium heat. Add the garlic, spring onions and red pepper. Sauté gently for about 10 minutes until the pepper has softened.
Prepare the salsa
- Add the tomatoes and orange rind and season well. Stir then bring to the boil.
- Simmer gently for around 45 minutes to allow the tomatoes to cook and the sauce to thicken slightly.
- Allow the sauce to cool a little, then whizz the sauce until smooth in a food process or using a hand blender.
- Press the salsa through a seive to remove any bits of skin and pips then transfer to a serving bowl.
Prepare the cauliflower
- Cook the cauliflower florets in lightly-salted boiling water for 5 minutes.
- Drain, refresh with cold water, then drain again.
- Lightly beat the egg in a bowl. Add the milk and beat again.
- Add the salt and slowly beat in the flour to produce a smooth batter.
- Dip the florets in the batter, shake off any excess, then deep fry at 180°C/360°F for 5 minutes.
- Remove from the oil and place on kitchen paper to drain.
Titli's Tips
Use a toothpick or cocktail stick to dip the florets in the batter.
The salsa can be used with a wide range of tapas. It also goes well with a bag of Doritos!
