  • 2 tbsp olive oil
  • 4 garlic cloves, finely chopped
  • 1 thin strip of orange rind (optional)

  2. Simmer gently for around 45 minutes to allow the tomatoes to cook and the sauce to thicken slightly.
  3. Allow the sauce to cool a little, then whizz the sauce until smooth in a food process or using a hand blender.
  4. Press the salsa through a seive to remove any bits of skin and pips then transfer to a serving bowl.
Prepare the cauliflower
  1. Cook the cauliflower florets in lightly-salted boiling water for 5 minutes.
  2. Drain, refresh with cold water, then drain again.
  3. Lightly beat the egg in a bowl. Add the milk and beat again.
  4. Add the salt and slowly beat in the flour to produce a smooth batter.
  5. Dip the florets in the batter, shake off any excess, then deep fry at 180°C/360°F for 5 minutes.
  6. Remove from the oil and place on kitchen paper to drain.
Titli's Tips
