Fajitas
Fajitas is a tasty Tex-Mex snack of spiced meat, peppers and onions with warm flour tortillas. Recharge your batteries with this recipe! Andele, andele, ariba, ariba!

Instructions
- Mix the marinade ingredients in a bowl. Stir in the meat and marinate for at least an hour in the ‘fridge.
- Heat the oil in a pan. Add in the meat and stir-fry quite vigorously until any liquid has been driven off, then stir-fry for 2-3 minutes more.
- Remove the meat from the pan and put to one side. Add the vegetables into the pan and stir-fry for 3-4 minutes until they start to become soft.
- Warm the tortillas in an oven. Spread with guacamole and add on meat, vegetables and cheese. Fold over to form a wrap.

Serve with salsa, guacamole and sour cream.
You can use the same recipe with chicken. You can also spice up the fajitas a bit more by adding some chilli powder into the marinade mix.
A different way of serving is to simply pile everything onto a plate and put the warmed tortillas on the side.
