Ingredients
  • 1 cup sultanas
  • 1 cup raisins
  • 1 cup suet, vegetable or beef
  • ½ cup currants
  • ½ cup sliced almonds
  • 6 tbsp brown sugar
  • 2-3 tsp mixed spice
  • Grated zest of 2 lemons
  • Juice from 2 lemons
  • 2 Granny Smith apples
  • 1 banana, chopped
  • 6 tbsp orange juice
  • 2-3 tbsp rum or brandy (optional)
  • About 750 g (26 oz) pie pastry
Instructions
  1. Grate the apples and place in a large bowl with the lemon juice. Mix well.
  2. Add the chopped banana and mix.
  3. Add in all the remaining ingredients EXCEPT the pastry (obviously!) and mix well.
  4. Transfer the mixture to an ovenproof dish, cover tightly and place in an oven at 110°C/230°F for 2 hours.
  5. Remove from the oven, mix well and allow to cool.
  6. Once cool you can mix in 2-3 tbsp of rum or brandy if you so wish.
  7. Roll out the pastry and cut discs for the pie base. Place the discs in a well-greased muffin tin.
  8. Place a couple of spoons of mixture into each pie case. Don’t overfill!
  9. Cut discs for the top of the pies and press onto the pie bases.
  10. Prick the top of each pie and bake in the oven at 180°C/360° fan oven, 200°C/400°F conventional oven for 25 minutes.
  11. Remove from the oven and allow to cool before removing the pies from the tray.
  12. Dust with icing sugar and serve.
Titli's Tips
You can use vegetarian or traditional beef suet in this recipe. Before you remove the pies from the tray, just twist them slightly to free them up. They keep well in a plastic box for several days and can be warmed slightly in a microwave before serving.

You can find a recie which doesn't use suet here
