Banana Cream Pie
Banana Cream Pie is an unmistakeably American dessert. In this banana cream pie recipe, shortcrust pastry, bananas, custard and cream combine to make a dreamy dessert.

  • 250 g (8 oz) shortcrust pastry
  • 284 ml (10 fl oz) double, whipping or heavy cream
  • 4-5 small ripe bananas
  • 3 tbsp icing (confectioner's) sugar
For the custard
  • 600 ml (20 fl oz) full cream milk
  • 120 g (4½ oz) sugar
  • 4 egg yolks, beaten
  • 5 tbsp cornstarch
  • 1 tsp vanilla flavouring
  • ¼ tsp salt
Blind-bake the pastry
  1. Roll the pastry out and line a 9" (23 cm) pie dish. Cover with plastic film and chill in the 'fridge for 30 minutes.
  2. Line the inside with baking paper and pour in some baking beans or lentils. Bake in the oven for 15 minutes.
  3. Remove the paper and the beans. Prick the base all over with a fork and bake in the oven for a further 5-10 minutes depending upon thickness.
  4. Remove from the oven and allow to cool.
Prepare the bananas
  1. Slice the bananas and line the bottom of the cold pastry case with a single layer of banana.
Prepare the custard
  1. Place the milk, sugar, vanilla flavouring, cornstarch and salt in a pan. Whisk well and keep whisking as you bring the mixture to a simmer.
  2. Simmer with stirring for 2 minutes.
  3. Pour a little of the milk into the egg yolks. Mix well, then pour the egg yolks into the milk. Beat well and return to the stove.
  4. Simmer with stirring for 2 minutes.
Complete the pie
  1. Pour enough of the hot custard into the pie case to cover the bananas. Smooth the custard out.
  2. Place another layer of banana and cover once again with custard. If you dare, add a third layer of bananas!
  3. Allow the pie to cool a little then place it in the 'fridge to chill.
  4. Beat the cream with the icing sugar (if using) until the cream is stiff enough to keep its shape.
  5. Decorate the top of the chilled pie with the cream. Place the pie in the 'fridge to chill well before serving.
Titli's Tips
To compensate for any shrinkage of the pastry during baking, make sure you roll the pastry out enough that the pastry overhangs the edge of the pie dish. You can cut it to size after baking.

To make a Vanilla Cream Pie, simply leave out the bananas!
