Blackcurrant Cordial

If you have blackcurrant bushes in your garden, chances are that you have a lot of blackcurrants every year. Use some to create a delicious homemade cordial.

Ingredients

1.5 kg (3½ lb) blackcurrants
750 g (27 oz) plain white sugar
3 lemons

Method

1 Put 750 ml (26 fl oz) of water in a pan. Add in the sugar and turn on the heat.
2 Grate the rind from the lemons, then squeeze the juice.
3 Once the sugar has dissolved in the water, add in the lemon rind and juice and bring to the boil.
4 Once it starts to boil, add in the blackcurrants. Mash a little with a potato masher and bring back to the boil.
5 Simmer the mixture for no more than 5 minutes,.
6 Pass the mixture through a fine sieve or a piece of muslin. Pour the liquid into clean and sterile bottles, leaving 1 cm (½”) gap at the top of the bottle. Seal with sterile stoppers.
