Blackcurrant Cordial
If you have blackcurrant bushes in your garden, chances are that you have a lot of blackcurrants every year. Use some to create a delicious homemade cordial.

Ingredients
  • 1.5 kg (3½ lb) blackcurrants
  • 750 g (27 oz) plain white sugar
  • 3 lemons
Instructions
  1. Put 750 ml (26 fl oz) of water in a pan. Add in the sugar and turn on the heat.
  2. Grate the rind from the lemons, then squeeze the juice.
  3. Once the sugar has dissolved in the water, add in the lemon rind and juice and bring to the boil.
  4. Once it starts to boil, add in the blackcurrants. Mash a little with a potato masher and bring back to the boil.
  5. Simmer the mixture for no more than 5 minutes,.
  6. Pass the mixture through a fine sieve or a piece of muslin. Pour the liquid into clean and sterile bottles, leaving 1 cm (½”) gap at the top of the bottle. Seal with sterile stoppers.
Titli's Tips
Dilute with water, fizzy water, or elderflower pressée. Add in some crushed ice for a taste of summer.
