Brownies
There are many recipes for Brownies and a lot of them are far too sweet for my tastes. This is THE ultimate Brownie recipe!

Ingredients
  • 200 g (1 cup, 7 oz) butter or margarine or ghee or sunflower oil
  • 400 g (2 cups, 14 oz) of sugar (white or brown or a mixture)
  • 225 g (1½ cups, 8 oz) plain flour
  • 200 g (7 oz) semi-sweet chocolate
  • 4 eggs
  • 1 tbsp vanilla essence
  • 1 tsp salt
  • Optional extras
  • ½ cup walnuts, or
  • ½ cup pecans, or
  • ½ cup chocolate chips, or…
Instructions
  1. Melt the chocolate by placing it in a bowl on a pan of simmering water. Add in the butter and mix well. Put to one side.
  2. Add the sugar, eggs and vanilla essence into a bowl and whisk at high speed for 10 minutes.
  3. Add in the chocolate mixture, the flour and the salt. Mix gently until smooth.
  4. Add in any optional ingredients you wish.
  5. Pour the mixture into a lightly greased baking tray 23cm x 34 cm (9″ x 13″). Bake in an oven at 180°C for 30-35 minutes.
  6. When a cocktail stick or skewer comes out clean from the cake, remove from the oven and allow to cool.
  7. When cool, remove from the tray and cut into about 24 pieces.
Titli's Tips
Beating the mixture for 10 minutes results in a light Brownie.

You can use other sizes of baking tray, but the multiple of the two sides should equal about 780 (for cm) or 120 (for inches). For example, you could also use a pan 27cm x 27 cm (11″ x11″). This will give the right thickness of Brownie.
