Vegan Burgers
This Vegan Burger is very simple to make and good on flavour.

Ingredients
  • 350 g (12 oz) drained tinned pinto beans
  • 130 g (6 oz) chopped mushrooms
  • 1 onion, finely chopped
  • 8 spring onions (scallions), finely sliced
  • 2 garlic cloves, crushed
  • 2 tbsp plain flour
  • 1 tsp cumin powder
  • 2 tsp parsley, finely chopped
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • Vegetable oil for shallow-frying the burgers
Instructions
  1. Heat the olive oil in a pan over a moderate heat and sauté the onions and garlic for about 5 minutes.
  2. Add in the mushrooms, spring onions and cumin powder. Fry gently for another 5 minutes.
  3. Add in the flour and cook for another 1 minute.
  4. Put the beans into a large bowl and mash them with a potato masher. Add in the onion/mushroom mixture, the parsley, and season with salt and pepper. Mix well.
  5. Form the mixture into 3 or 4 patties.
  6. Shallow fry the patties for about 5 minutes each side in medium-hot vegetable oil.
Titli's Tips
The burgers are quite fragile so need handling with care. They are best shallow-fried, but you can grill them. I definitely would not recommend putting them on a barbecue!

You can substitute the pinto beans with any other cooked beans. You can also experiment with the herbs and spices that you add. This is another vesatile recipe!
