Tuscan-Style Chicken Stew
This simple chicken stew is inspired by the flavours of Tuscany.

Ingredients
  • 400 g (14 oz) chicken (thighs, breast or legs)
  • 400 g (14 oz) chopped tomatoes
  • 300 g (10 oz) can of cannellini beans, drained
  • 1 red capsicum (bell) pepper, deseeded and sliced
  • 1 small onion, thinly sliced
  • 1 garlic clove, crushed
  • 4 tbsp (alcohol-free) white wine (optional)
  • 2 tbsp breadcrumbs
  • 1 tsp dried oregano
  • 1 tsp olive oil
  • Salt
  • Pepper
Instructions
  1. Heat the oil in a pan and brown the chicken. Remove and keep warm.
  2. Add the onion and red pepper to the pan and sauté gently for a few minutes until they soften.
  3. Add the garlic and fry for a further 30 seconds. Add the chicken, tomatoes, oregano and wine. Season well and bring to the boil. Simmer gently for 20-30 minutes or until the chicken is cooked.
  4. Stir in the drained beans and cook for a further 5 minutes to warm the beans through.
  5. Sprinkle the breadcrumbs on top and place until a hot grill (broiler) until golden brown.
Titli's Tips
Serve with a sprinkling of fresh oregano leaves and some crusty bread!
