Tuscan-Style Chicken Stew
This simple chicken stew is inspired by the flavours of Tuscany.

Instructions
- Heat the oil in a pan and brown the chicken. Remove and keep warm.
- Add the onion and red pepper to the pan and sauté gently for a few minutes until they soften.
- Add the garlic and fry for a further 30 seconds. Add the chicken, tomatoes, oregano and wine. Season well and bring to the boil. Simmer gently for 20-30 minutes or until the chicken is cooked.
- Stir in the drained beans and cook for a further 5 minutes to warm the beans through.
- Sprinkle the breadcrumbs on top and place until a hot grill (broiler) until golden brown.

Serve with a sprinkling of fresh oregano leaves and some crusty bread!
