Thai-Spiced Salmon
This dish is inspired by a fusion of Thai flavours and can spice up any fillet of fish.

  • 2 salmon fillets (about 150 g / 5 oz each)
The Marinade
  • 2 tsp lime juice
  • 1½ tsp grated fresh ginger
  • ½ tsp sesame oil
  • ½ tsp crushed coriander seeds
  • ¼ tsp chilli powder
  1. Mix the marinade ingredients together in a small bowl and spread evenly over the flesh side of the fish.
  2. Place in the 'fridge for 30 minutes to marinate.
  3. Put the fish skin-side down in a lightly-greased heavy-bottomed pan. Cook over a medium-high heat for 5-10 minutes (depending on the thickness of your fish).
Titli's Tips
If your fillets are quite thick you can turn them over near the end of cooking, but better is to put the pan under a grill (broiler) to finish cooking the top part of the fish.

In principle this recipe with work with any fish, and it can also be baked in the oven.

Serve with rice and some stir-fried vegetables.
