Smoked Salmon Carbonara

- Melt the butter in a small pan over a medium heat and cook the garlic for 1 minute. Remove the pan from the heat.
- Beat the eggs in a bowl. Add the parmesan, smoked salmon and the butter/garlic. Season liberally with freshly ground black pepper. Mix well.
- Heat a large pan of water to the boil and add a couple of teaspoons of salt. Add the pasta and continue boiling for 7-8 minutes or until the pasta is al dente.
- Drain the pasta and return the pasta to the hot pan. Add the sauce and toss well.
- Serve with a sprinkling of extra grated parmesan and some chopped chives.

Serve this dish accompanied by some garlic bread. I buy smoked salmon when it is on special offer in the supermarkets, making it a relatively inexpensive meal.
