Smoked Salmon Carbonara
Smoked salmon carbonara is a delicious and simple main course recipe which never fails to impress.

Ingredients
  • 175 g (6 oz) dried pasta, e.g. spaghetti, linguini, tagliatelle.
  • 120 g (4 oz) smoked salmon, diced
  • 2 eggs
  • 3 tbsp freshly grated parmesan
  • 1 garlic clove, crushed,
  • 1 knob of butter
  • Black pepper
  • Salt
To serve
  • Grated parmesan cheese
  • Chopped chives
Instructions
  1. Melt the butter in a small pan over a medium heat and cook the garlic for 1 minute. Remove the pan from the heat.
  2. Beat the eggs in a bowl. Add the parmesan, smoked salmon and the butter/garlic. Season liberally with freshly ground black pepper. Mix well.
  3. Heat a large pan of water to the boil and add a couple of teaspoons of salt. Add the pasta and continue boiling for 7-8 minutes or until the pasta is al dente.
  4. Drain the pasta and return the pasta to the hot pan. Add the sauce and toss well.
  5. Serve with a sprinkling of extra grated parmesan and some chopped chives.
Titli's Tips
Serve this dish accompanied by some garlic bread. I buy smoked salmon when it is on special offer in the supermarkets, making it a relatively inexpensive meal.
