Pound Cake
This is a very simple and traditional Pound Cake recipe, possibly the simplest cake you can bake!

Ingredients
  • 250 g (8 oz) plain (all purpose) flour
  • 250 g (8 oz) sugar
  • 250 g (8 oz) butter, room temperature and cut into pieces
  • 250 g (8 oz) eggs (about 5 medium eggs).
  • 2 tsp baking powder
  • 1 tsp vanilla flavouring
  • ½ tsp salt
Instructions
  1. Place the butter and sugar in a bowl and cream them together.
  2. Add in the eggs one at a time, beating the mixture well between each egg.
  3. Mix in the vanilla essence.
  4. Sift in the flour, baking powder and salt. Fold the flour in to give a smooth creamy mixture.
  5. Lightly grease a 22cm x 11cm (8½" x 4½") loaf tin and line the bottom with baking paper. Pour in the cake batter and smooth it out.
  6. Bake at 170°C (340°F) for around 1 hour.
  7. When cooked, allow to stand for 10 minutes before removing it from the tin, then turn out onto a wire rack to cool.
Titli's Tips
Check the cake after about 30 minutes. If it looks like it may burn simply cover it with foil for the remainder of its cooking time.


To check whether it is cooked you can insert a skewer or toothpick into the cake. If it comes out clean then the cake is cooked.
