Pasta with Bacon and Chard
I grow chard in my garden and this quick and simple supper is so tasty you'll want to make it again and again!

Ingredients
  • 160 g dried pasta (shells, bows or spirals are best)
  • 300 g (10 oz) fresh chard
  • 300 g (10 oz) smoked bacon, chopped
  • 2 shallots, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil
  • Salt
  • Ground black pepper
  • Grated Parmesan or similar to garnish
Instructions
  1. Take the chard and tear the leaves from the stalks. Slice the chard stalks crossways.
  2. Heat the oil in a pan and stri-fry the shallots for about 2 minutes.
  3. Add the crushed garlic, stir and cook for 30 seconds.
  4. Add the bacon and stir-fry for around 3-4 minutes until the bacon has taken on colour.
  5. Add the chopped chard stalks and stir-fry for 3-4 minutes.
  6. Begin cooking the pasta according to the instruction on the packet.
  7. Season well with salt and pepper then tear the chard leaves into the pan.
  8. Spread the leaves out, cover and cook gently for 3-4 minutes.
  9. Stir the mixture, cover then cook gently for a further 3-4 minutes.
  10. Drain the pasta and mix well with the bacon and chard melange!
  11. Serve.
Titli's Tips
Serve with a green salad if you wish.

I always think of chard as a dual-purpose vegetable. The stalks can be used like onions - they soften but keep their shape when cooked (but taste nothing like onions) - and the leaves can be used like spinach (but taste nothing like spinach).
