Onion-Flavoured Hard-Boiled Eggs
These hard-boiled eggs are a Middle-Eastern favourite with their distinctive flavour and beige-brown colour.

Ingredients
  • 4-6 eggs
  • Skins from 6 onions
Instructions
  1. Put the eggs and onion skins in a pan. Pour in enough cold water to cover the melange.
  2. Bring the pan to a boil, cover and turn the heat down as low as possible.
  3. Cover and simmer gently for 6-7 hours, topping up the water when necessary.
  4. Plunge the eggs into cold water and leave to cool before peeling.

These eggs make an excellent snack with a salad or as part of a mezze.

The eggs can be kept refigerated for 2 days without losing their flavour.
