Macaroni Cheese
Macaroni Cheese is known as “Cheesey Choobs” in our house and is wonderful comfort food.

Ingredients
  • 175 g (6 oz) dried macaroni
  • 300 ml (11 fl oz) milk
  • 250 g (8 oz) grated cheese
  • 60 g (2 oz) butter or margarine
  • 50 g (2 oz) plain flour
  • 50 g (2 oz) grated parmesan cheese
  • 1 tsp garlic paste or 1 crushed garlic clove
  • 1 tsp mustard
  • ½ tsp dried oregano
Instructions
  1. Melt the butter in a pan and add the garlic. Cook for 1-2 minutes.
  2. Add in the flour and cook for 2 minutes with stirring.
  3. Add the milk a bit at a time into the pan, stirring well between each addition. Once all the milk is added stir in the oregano and the mustard and put the pan to one side.
  4. Add the pasta to a pan of boiling water and cook for 5 minutes, then drain.
  5. Reheat your sauce. Add in the macaroni and the cheeses (NOT the parmesan!). Mix to coat the macaroni.
  6. EITHER cook the mixture over a low heat for 12-15 minutes OR pour the mixture into an ovenproof dish, sprinkle on the parmesan and bake at 190°C for 12-15 minutes.
Titli's Tips
This version of macaroni cheese gives a really thick sauce. If you prefer a less thick sauce use a greater quantity of milk while making the sauce.

This is a great dish to experiment with for the seasoning. You can add all sorts of herbs or spices, but be sparing or you’ll mask the flavour of the cheese.
