Lassi
Lassi is the perfect companion for any hot curry. The proteins and lipids in the drink help to dissolve the chilli oil that sticks in your mouth and so cools you down.

Ingredients
  • 400 ml (14 fl oz) plain yoghurt
  • 400 ml (14 fl oz) water (or less if you prefer a thicker lassi)
  • Pulped fruit (optional)
  • 1 tsp sugar (or more if you prefer)
Instructions
  1. Add all the ingredients into a bowl.
  2. Take out whatever weapon you prefer and beat the mixture.
  3. Decorate with umbrellas, a few chopped nuts, or a sprig of mint. Drink.
Titli's Tips
Any soft fruit is good to add to lassi – raspberry, strawberry, mango or even banana. Avoid acidic fruits like lemons or limes. You can easily adjust the thickness and sweetness to your particular taste.
