Irish Stew
This is a very simple and tasty lamb stew. Soak up the gravy with some Soda Bread!

  • 500 g (1 lb) lamb pieces
  • 1 kg (2 lb) potatoes, peeled and cut into chunks
  • 2 carrots, coarsely chopped
  • 1 onion, coarsely chopped
  • 1 leek, thinly sliced
  • 1 tsp thyme
  • 1 tsp parsley
  • 2 stock cubes
  • 2 tsp vegetable oil
  1. Heat the oil in a pan and brown the lamb (about 5 minutes).
  2. In a large casserole dish place half the lamb, half the potatoes, half the carrots, half the leeks and half the onion. Add the thyme and parsley and season well.
  3. Add the remaining lamb, potatoes, carrots, onion, and leeks. Dissolve the stock cubes in 750 ml (26 fl oz) of water and pour onto the stew. Cover and cook in the oven at 180°C for 2 hours.
Titli's Tips
If you prefer a thicker gravy you can either cook for extra time with the casserole uncovered, or you can dissolve 2 tbsp of flour in a small amount of the stock and add it to the stew.

This stew can also be cooked on a stovetop, in a pressure cooker or in a slow cooker.
