Don’t put unripe tomatoes on your window sill for days on end. Make chutney with them!

  • 400 ml (14 fl oz) vinegar
  • 200 g (7 oz) brown sugar
  • 200 g (7 oz) shallots or onions, finely chopped
  • 100 g (3½ oz) raisins or sultanas
  • 1 large cooking apple, peeled, cored and diced
  • 1½ tsp salt
  • 1 tsp ground black pepper
  1. Add all the ingredients into a large pan and bring gently to the boil.
  2. Simmer gently for 1½ to 2 hours, stirring from time to time.
