Fried Calamari
Squid may not be the prettiest creatures, but they are certainly tasty when fried!

  • 500 g (1 lb) squid
  • 150 g (1 cup) plain flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano
  • ½ tsp paprika
  • Oil for frying
  1. Prepare the squid: Grab the squid just behind the head and pull the head from the body. Cut the tentacles from the squid near where they join the head and just before the beak. Discard the head and entrails.
  2. Wash the body cavity, removing any remaining goop from the inside. Remove the pieces of clear cartilage.
  3. Peel the dark outer membrane from the body, strip off the wings and wash both the body and wings.
  4. Cut the body into ¼” rings and the wings into ¼” slices. Place all the squid bits into a bowl of cold water.
  5. Mix the flour and seasoning in a bowl. Drain the squid.
  6. Dredge the squid pieces in the flour and fry in batches at 180°C for 1 minute.
  7. Serve with lemon wedges and salad. Or chips.
Titli's Tips
Do not fry the squid for too long or it will have the texture of a rubber band. The squid should be succulent after frying for only 1 minute.
