Egg Fried Rice
Egg Fried Rice is really quick and easy to prepare!

  • 500 g (1 lb) cooked rice
  • 1-2 eggs, beaten
  • 2 spring onions (scallions), separated into white and green parts and chopped
  • Soy sauce
  • 2 tbsp vegetable oil
  1. Heat the oil in a pan or wok over a medium-high heat. When the oil starts to smoke add in the white spring onion and the beaten egg. Allow to sit for 5 seconds.
  2. Add in the rice and stir-fry for 3-4 minutes.
  3. Once the rice is hot season with soy sauce, add in the green parts of the spring onion, stir and serve.

You can add in all sorts of extra ingredients into this recipe to make any kind of fried rice you wish. For example:

- Peas
- Mushrooms
- Chopped capsicums
- Prawns
- Bits of cooked chicken
- Pineapple
- All of the above
