Coronation Chicken
There’s more to Coronation Chicken than mayonnaise and curry powder. Forget soggy sandwich fillings and make some REAL Coronation Chicken!

  • 1 whole chicken, 1 kg (2¼ lb)
For cooking the chicken
  • 1 tsp salt
  • 1 cinnamon stick
  • 6 black peppercorns
  • Thumb-sized piece of ginger, sliced
  • 1 bay leaf
  • Pinch of saffron strands
For the sauce
  • 200 ml (7 fl oz) mayonnaise – I use low-fat mayonnaise
  • 200 ml (7 fl oz) Greek yoghurt (or thick yoghurt)
  • ½ cup chopped fresh coriander
  • 4 tbsp mild mango chutney
  • 50 g (2 oz) soft dried apricots, finely chopped
  • 2 tbsp mild curry powder
  • 20 g (1 oz) flaked almonds
  • 2 tsp Worcestershire sauce
  • 1 tsp grated ginger
  • Basmati rice to serve
  1. Place the chicken in a large pan with the salt, cinnamon, peppercorns, ginger, saffron and the bay leaf. Add enough water to almost cover the chicken. Bring to the boil, cover and simmer gently for about 1½ hours.
  2. Put the mango chutney and apricots in a large bowl and mix. Toast the curry powder in a dry frying pan over a medium heat for 1 minute, then add to the bowl. Add the grated ginger, Worcestershire sauce, mayonnaise and yoghurt. Mix well and place in the ‘fridge to chill while the chicken cooks.
  3. Remove the chicken from the pan, allow to drain and set aside to cool. When cool, remove the meat and cut any large pieces into bite-sized chunks.
  4. Add the chicken and coriander to the sauce and mix well. Chill for 1 hour in the ‘fridge. Serve on a bed of basmati rice and sprinkle with the sliced almonds.

The liquid you cooked the chicken in makes a great stock!

To make the “Patriotic Rice” prepare three batches of coloured rice – one red, one blue and one uncoloured. Then use the key ingredient of Patience to arrange them into a Union Jack, or just mix them together to make a Red-, White- and Blue-speckled rice.
