Chicken with Cashew Nuts
Chicken with Cashews is a very simple, classic and popular dish. You can make it at home in the time it takes you to walk to the takeaway and back!

  • 450 g (1 lb) chicken breast, cubed
  • 1 green capsicum, deseeded and cut into chunks
  • 1 small onion, cut into chunks
  • 75 g (3 oz) unsalted cashews
  • 5 slices of fresh ginger
  • 1 tsp cornflour (cornstarch)
  • 2 tsbp vegetable oil
For the sauce
  • 3 tbsp water
  • 2 tsp oyster sauce
  • 1 tsp soy sauce
  • ½ tsp sugar
  • A dash of sesame oil
  1. Place the sauce ingredients in a small bowl and mix well.
  2. Heat 1 tbsp of the oil in a pan over a medium-high heat for 2-3 minutes. Remove from the pan with a slotted spoon and put to one side.
  3. Add another tbsp of oil into the pan and stir-fry the onion, capsicum and ginger for 2-3 minutes.
  4. Add the chicken back into the pan together with the sauce. Stir the cornflour in 2 tbsp of water and add to the pan. Mix well.
  5. Add in the cashews and continue stir-frying until the chicken is fully cooked (5-7 minutes).

Serve with some simple plain boiled rice for a delicious meal.
