Chicken Moglai
Murgh Moglai is a delicately spiced dish which relies on saffron for a lot of its flavour.

  • 2 chicken breasts
  • 1 small onion, finely chopped
  • 1 beaten egg, seasoned with salt & pepper
  • 5 tbsp plain yoghurt
  • 1 bay leaf
  • 2½ cm stick of cinnamon, broken up
  • 2 green cardamoms
  • 2 cloves
  • 1 tsp grated ginger
  • 1 tsp crushed garlic
  • 8-10 saffron strands
  • 4 tbsp ground almonds
  • 3 tbsp cream
  • 3 tbsp ghee
  1. Brush the chicken breasts on both sides with the beaten egg.
  2. Heat the ghee in a pan and fry the chicken for 2-3 minutes each side. Remove from the pan and put to one side.
  3. Fry the onions, garlic, ginger, bay leaf, cinnamon, cloves and cardamoms for around 5 minutes until the onions are golden brown.
  4. Turn off the heat and allow the pan to cool for 5-10 minutes.
  5. Add in the yoghurt and saffron. Mix well to avoid curdling the yoghurt.
  6. Add the chicken breasts and any juices. Cook on a low heat for 15-20 minutes until the chicken is cooked and tender.
  7. Stir in the ground almonds and cream. Serve.
