Chicken Fricassee
A Fricassee is a simple stew of white meat such as chicken in a white sauce. There are many recipes for Fricassee but this is the simplest I know.

Ingredients
  • 600 g (20 oz) chicken breasts, cut into strips
  • 250 g (8 oz) mushrooms, sliced 5mm (¼”) thick
  • 3 carrots, cut into matchsticks 5mm (¼”) thick
  • 1 medium onion, chopped
  • 125 ml (4 fl oz) alcohol-free white wine
  • 125 ml (4 fl oz) crème fraiche (or cream or milk)
  • 3 tbsp plain flour
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 2 tsp thyme
  • 1 bay leaf
  • Salt
  • Pepper
  • Fresh chives for garnish
Instructions
  1. Melt the butter and oil in a pan. Add the onions and garlic and sauté for 5 minutes.
  2. Turn up the heat slightly, add in the chicken and stir-fry for 5 minutes to brown the meat.
  3. Season well with salt and pepper. Stir in the flour and cook with stirring for 1 minute.
  4. Add 250 ml (8 fl oz) water, the wine (or extra water), and the herbs. Mix well then add in the carrots and mushrooms. Stir and bring to the boil. Cover and simmer for 15 minutes.
  5. Turn off the heat, stir in the crème fraiche and serve.
Titli's Tips
Serve in a bowl and garnish with chopped chives. You can eat this with rice or, best of all, some crusty French bread to mop up the delicious sauce.
