Chicken Bhoona
Bhoona is a quick and easy mildly-spiced dry dish which is best eaten with roti.

Ingredients
  • 500 g (1 lb) chicken, cubed
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, chopped
  • 50 g (3 tbsp) creamed coconut
  • 1 tsp garam masala
  • 1 tsp coriander
  • ½ tsp turmeric
  • ½ tsp chilli powder
  • 2 tbsp ghee or vegetable oil
  • 1 tbsp white vinegar
Instructions
  1. Heat 1 tbsp of the ghee in a pan and fry the chicken for about 5 minutes until browned. Remove from the pan with a slotted spoon.
  2. Place the onions, garlic and tomatoes in a food processor and whizz until smooth.
  3. Heat 1 tbsp of ghee in a clean pan and pour in the whizzed sauce together with the spices. Bring to the boil and simmer for 5 minutes.
  4. Add the creamed coconut, the vinegar and the chicken. Simmer for 15 minutes.
  5. Season with salt and serve.
Titli's Tips
The consistency of this dish is quite thick. You can create more gravy by adding boiling water into the curry, but it supposed to be a dry curry.
