Celery & Walnut Soup
This combination of celery and walnuts in a soup is delicious hot or cold.

  • 1 head of celery (about 500 g / 1 lb), washed and chopped
  • 2 shallots, chopped
  • 50 g (2 oz) walnuts
  • 2 tbsp cream (optional)
  • 1 vegetable stock cube
  • 1 tbsp vegetable oil
  • Salt
  1. Heat the oil in a pan and sauté the shallots gently for 2 minutes.
  2. Add the celery and sauté for a further 5 minutes.
  3. Now add 650 ml (22 fl oz) of water. Crumble in the stock cube and bring to the boil. Simmer for 20 minutes.
  4. Meanwhile, lightly toast the walnuts over a medium heat in a dry frying pan for a couple of minutes until they become fragrant.
  5. Add the walnuts to the soup and allow it cool for about 10 minutes.
  6. Blend the soup in a food processor or with a hand blender. Season with salt, add in the cream and serve immediately.
Titli's Tips
This soup can be eaten hot or chilled. Serve with some herb croutons for extra flavour, not that this soup needs extra flavour!
