Beef Wellington
Beef Wellington is a classic British dish of tender beef fillet baked with a tasty stuffing in puff pastry. A show-stopper for any dinner party!

Ingredients
  • 1 kg (2 lb) piece of good quality beef (fillet, topside, etc.)
  • 350-400 g (12-14 oz) puff pastry
For the stuffing
  • 250 g (8 oz) mushrooms, finely chopped
  • 1 onion, finely chopped
  • 1 egg, beaten
  • 25 g (1 oz) butter
  • 2 tbsp fresh parsley, chopped
  • 1 garlic clove, crushed
To prepare the beef
  • 2 tbsp vegetable oil
Instructions
  1. Prepare the beef: EITHER heat 2 tbsp of oil in a pan until very hot, then sear the meat all over for about 2 minutes OR place the beef in a roasting pan, brush with oil and roast at 220°C for 30 minutes.
  2. Allow the meat to cool for 30 minutes then place in the 'fridge for a further 30 minutes.
  3. Make the stuffing: Melt the butter in a pan and sauté the onions gently for 5 minutes.
  4. Add the garlic and mushrooms and mix well. Cook on a low heat for 15-20 minutes, stirring occasionally.
  5. Turn off the heat, season well, add the parsley and mix well. Place the stuffing into a bowl and place in the 'fridge to chill.
  6. Roll the puff pastry out to a size large enough to wrap the meat. Spread the stuffing onto the pastry leaving a 2 cm (1") border all the way around.
  7. Place the meat onto the stuffing and fold the pastry over the meat. Use the beaten egg to glue any seams together and pinch seams together well.
  8. Trim off any excess pastry. Brush all over with beaten egg and transfer the Wellington to a baking tray. Chill in the 'fridge for 30 minutes.
  9. Bake at 200°C (390°F) for 30 minutes. Allow to rest for 10 minutes before carving.
Titli's Tips
The only cuts of beef that you can use for this recipe are those that require very little cooking to become tender. Serve with baby potatoes and a selection of vegetables, and make some gravy if you have to!
