Banana Cake
Don’t throw away those over-ripe bananas. Make a simple and delicious banana cake with them instead!

  • 3 medium or 2 large very ripe bananas (about 450 g / 1 lb)
  • 250 g (8 oz) self-raising flour
  • 175 g (6 oz) sugar
  • 125 g (4 oz) butter or margarine, room temperature, cut into pieces
  • 2 eggs
  1. Peel the bananas and mash them well in a bowl.
  2. Cream together the butter and sugar. Beat one of the eggs into the mixture. Add a tbsp or two of the flour and beat the second egg into the mixture.
  3. Add the mashed banana into the bowl and mix well.
  4. Sieve the remaining flour into the bowl and mix well.
  5. Pour the mixture into a greased 2-pound loaf tin (or a small cake tin) and bake at 180°C for 40 minutes.
  6. Remove the cake from the oven, cover with foil and bake at 150°C for a further 20-30 minutes.
  7. Check that the cake is cooked by pusing a skewer into it. If it comes out clean then it is cooked. Leave to cool for 10 minutes before turning the cake out onto a wire rack.
