Baked Pancakes
Pancakes don't always have to be cooked on the stove-top. Baked pancakes are delicious too!

  • 600 ml (20 fl oz) milk
  • 250 g (8 oz) plain or AP flour
  • 2 eggs
  • 25 g (1 oz) melted butter
  • pinch of salt
  • Toppings of your choice (cooked meats, cheese, capsicum, sweetcorn, chillis, mushrooms, fruit, …)
  • Oil or butter to grease the pan
  1. Preheat the oven to 200°C/400°F.
  2. Prepare the batter by whisking together the flour, eggs, salt, milk and butter.
  3. Place a kn*b of butter in a cast-iron skillet or pizza pan and place in the hot oven for 1 minute.
  4. Spread the butter evenly on the base of the pan. Add enough batter to the pan to give a depth of 2-3 mm.
  5. Add on the toppings.
  6. Bake in the oven for 10-15 minutes until the pancake is golden brown.
Titli's Tips
You can choose whatever topping you like for these pancakes – savoury or sweet. The sweet pancakes go particularly well with ice-cream.
