Baby Potatoes with Garlic Dip
Boil up some baby potatoes and make yourself a garlic dip. The result is an irresistable tapas that everyone enjoys.

  • 450 g (1 lb) baby potatoes
  • 150 ml (5 fl oz) olive oil
  • 4 garlic cloves, finely chopped or crushed
  • 2 egg yolks
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • Salt
Prepare the dip
  1. Put the garlic, egg yolks, lemon juice and a pinch of salt in a food processor and whizz for a few seconds.
  2. Turn on the processor and drizzle in the olive oil very slowly. It should take several few minutes to add it all.
  3. Transfer the dip to a serving dish.
Prepare the potatoes
  1. Boil the potatoes in water until tender. Drain.
  2. Add a heaped teaspoon of the dip into the pan and shake to coat the potatoes with the dip.
  3. Put on the lid and leave for 20 minutes for the flavours to infuse.
  4. Put the potatoes in a serving dish, season with salt and sprinkle with parsley. Serve.
Titli's Tips
There are a few things to note about the dip.

- It isn't garlic mayonnaise. You would never use olive oil to make a mayonnaise.
- It isn't aïoli or allioli. You don't use eggs to make either of those.

It's also important to use a good quality olive oil that you like the taste of!
