Al Baik is to Saudi Arabia what KFC is to the rest of the world. This recipe provides a make-at-home version of Al Baik fried chicken.

Ingredients
  • 1 chicken, jointed (optional - remove skin)
For the marinade
  • 3 tbsp vegetable oil
  • 2 tbsp hot paprika
  • Juice of 1 lemon
  • 1½ tsp salt
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • ½ tsp cinnamon powder
For the coating
  • 1 cup plain flour
  • ½ cup cornflour (corn starch)
  • 1 tsp baking powder
  • 2 beaten eggs
Instructions
  1. Prepare the marinade by mixing together all the marinade ingredients.
  2. Stab the chicken pieces all over with a fork.
  3. Rub the marinade really well into the chicken pieces.
  4. Place the chicken pieces on a plate and spoon on any remaining marinade.
  5. Cover and chill for 6-8 hours.
  6. Mix together the flour, cornflour and baking powder (the dry mix).
  7. Take each chicken piece in turn and dip it first into the dry mix, then the beaten egg, then once more in the dry mix.
  8. Deep fry the chicken pieces at 180°C/360°F for about 15 minutes.
  9. Remove the chicken pieces from the oil and place on some kitchen paper to drain.
  10. Serve with fries, salad and garlic dip.
