Seafood Paella

This paella is both quick and tasty and uses ingredients you should be able to find in your nearest supermarket.
  • 500 g (16 oz) mixed seafood (fresh or frozen)
  • 200 g (7 oz) arborio or paella rice
  • 75 g (2½ oz) frozen peas
  • 4 tomatoes, peeled and chopped
  • 3 garlic cloves, chopped
  • 1 red capsicum, deseeded and cut into strips
  • 1 medium onion, chopped
  • 4-5 strands of saffron in 1 tbsp hot water
  • 1 fish stock cube
  • 4 tbsp olive oil
  1. Heat the oil in a paella pan or large flat-bottomed pan on a medium heat. Add the onion, garlic and capsicum and sauté gently for 5-6 minutes.
  2. Add the tomatoes and cook for a further 2 minutes.
  3. Add the rice, stir well and cook for 2-3 minutes.
  4. Season with salt and pepper. Add in the saffron strands and water. Dissolve the stock cube in 500 ml (16 fl oz) of boiling water and add to the pan. Simmer gently for 20 minutes.
  5. Add the frozen peas and seafood, stir carefully and cook for a further 5 minutes or until any prawns turn pink.
  6. Sprinkle with freshly chopped parsley before serving.

Titli's Tips
Once you have added the stock and brought it to the boil, avoid stirring the bottom of the pan again. If you are lucky the bottom of the paella will be very slightly burnt. This is the best part of the dish!
