You can use the KFC mix of herbs and spices to make some awesome Kentucky Fried Potatoes! Just don't eat too many...
- 400 g (14 oz) potatoes, peeled and sliced
- 2 beaten eggs
- 6 tbsp plain (AP) flour
For the KFC mix
- 75 g plain (AP) flour
- 2 tsp salt
- 1 tsp oregano
- 1 tsp basil
- 1 tsp sage
- 1 tsp marjoram
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- This couldn't be easier: Toss the potatoes in the flour, making sure they are well coated.
- For each potato slice; dunk in the beaten egg, toss in the KFC mix then drop into hot oil at 180°C/360°F and fry for 10 minutes.
- Drain and serve!

Slice the potatoes about 5 mm (¼") thick. These make a great accompaniment to any meal in place of regular chips (fries)
