Lime Pickle

Lime pickle is a great accompaniment to any Desi meal. It also helps the digestion. When limes are cheap, make Lime Pickle!
Ingredients
  • 7 limes, washed and cut in pieces
  • 50 g (2 oz) salt
  • 170 ml (6 fl oz) mustard oil
  • ½ tsp asafoetida
Spice Mix 1
  • 1 tbsp mustard powder
  • 1 tbsp fenugreek powder
  • 1½ tbsp chilli powder
  • ½ tsp turmeric
Instructions
  1. Place the cut limes into a clean, sterile PYREX bowl. Pour on the salt and cover with plastic wrap. Shake the bowl to mix the salt & limes. Leave in a warm place for 2 weeks.
  2. Ho hum…
  3. The limes should now be khaki and soft. Add Spice Mix 1 to the limes and mix well.
  4. Add the oil to a pan together with the asafoetida. Heat with stirring until the oil just starts to smoke.
  5. VERY CAREFULLY pour the oil slowly over the limes. It will sizzle and spit a little.
  6. Mix well and place in sterile jars. Label and leave for a couple of weeks before eating.

The quantities here make around 600 g (1½ lb) of pickle.
