The Kisir recipe is really a Turkish version of Tabbouleh, but more tasty and more spicy!
  • 175 g (6 oz, about 1 cup) bulgur
  • 1 red onion, thinly sliced
  • ½ cup of finely chopped fresh parsley
  • ⅓ cup of finely chopped fresh mint
  • The juice of 1 large lemon
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tsp sugar
  • 2 tsp Turkish pepper paste (or 2 finely chopped red chillis)
  • Salt
  • Pepper
  1. Place the bulgur in a large bowl and add enough boiling water to cover the bulgur by about 1" (2½ cm). Stir, cover and leave for 25 minutes.
  2. Drain the bulgur and gently squeeze out any excess water.
  3. Place the bulgur in a large, clean bowl. Add the lemon juice and the olive oil and mix well.
  4. Add the tomato paste and mix well.
  5. Add the remaining ingredients, season with salt and pepper and mix well before serving.

Titli's Tips
You can make this as spicy as you like by adding in extra chopped red chillis. You can also use sour pomegranate juice instead of the lemon juice.
