Welsh Rarebit
Welsh Rarebit makes a wonderful cheesy supper. That’s RAREBIT, not RABBIT!

Ingredients
  • 150 ml (5 fl oz) milk
  • 100 g (3½ oz) grated cheese
  • 25 g (1 oz) butter or margarine
  • 1 tbsp plain flour
  • 1 tsp mustard
  • 1 egg yolk
  • 2 buttered pieces of toast
  • Worcestershire sauce
  • Salt
  • Pepper
Instructions
  1. Melt the butter in a pan and stir in the flour. Continue cooking with stirring for about a minute.
  2. Add the milk a little at a time and beat with a whisk.
  3. Once all the milk is added bring the sauce to the boil then remove from the heat.
  4. Add the egg yolk and mustard and whisk to incorporate. Season with salt, pepper and a few dollops of Worcestershire sauce. Add in the cheese and stir well.
  5. Bring to the boil then remove from the heat and leave to cool for 10-15 minutes.
  6. Pour the sauce on the toast and place under a hot grill until the mixture starts to bubble.
  7. Turn on the TV, kick back and enjoy your glorified cheese on toast.
Titli's Tips
The traditional version of this recipe adds a tbsp or two of a full-bodied ale into the mixture. You can also add cider or apple juice.
