Welsh Rarebit
Welsh Rarebit makes a wonderful cheesy supper. That’s RAREBIT, not RABBIT!

Instructions
- Melt the butter in a pan and stir in the flour. Continue cooking with stirring for about a minute.
- Add the milk a little at a time and beat with a whisk.
- Once all the milk is added bring the sauce to the boil then remove from the heat.
- Add the egg yolk and mustard and whisk to incorporate. Season with salt, pepper and a few dollops of Worcestershire sauce. Add in the cheese and stir well.
- Bring to the boil then remove from the heat and leave to cool for 10-15 minutes.
- Pour the sauce on the toast and place under a hot grill until the mixture starts to bubble.
- Turn on the TV, kick back and enjoy your glorified cheese on toast.
Titli's Tips
The traditional version of this recipe adds a tbsp or two of a full-bodied ale into the mixture. You can also add cider or apple juice.
