Vegetarian Stuffed Peppers
The great thing about stuffed peppers is that they are quick, easy and so versatile!

Instructions
- Mix the stuffing ingredients together in a bowl and spoon into the peppers.
- Top with cheese. Place the peppers in a baking tray and add about ¼” of water into the bottom of the tray,
- Bake at 180°C for about 30 minutes.
- Er… That’s it.
Titli's Tips
You can vary the stuffing as you like. This is a sort of chinese-inspired stuffing, but you could use Indian spices to create a Desi-inspired stuffing, or aubergines and herbs like oregano and rosemary for a Mediterranean feel. Experiment!
