Vegetarian Scotch Eggs
Scotch eggs are great for a tea-time snack or for taking on a picnic. These delicious vegetarian scotch eggs will satisfy all tastes.

Ingredients
  • 5 eggs
  • 400 g (14 oz) can of chickpeas, drained
  • 75 g (2½ oz) breadcrumbs
  • 75 g (2½ oz) plain flour
  • 1 medium onion, finely chopped
  • 1 large carrot, grated
  • 1 garlic clove, finely chopped
  • 1 tsp mustard
  • 1 tsp dried thyme
  • 2 tsp olive oil
  • Salt
  • Pepper
Instructions
  1. Place 4 of the eggs in boiling water for 8 minutes, then transfer to a bowl of cold water for 10-15 minutes before peeling.
  2. Beat the fifth egg in a small bowl.
  3. Heat the oil in a pan over a medium heat and add the onion, carrot and garlic. Stir-fry gently for about 5 minutes or until the onion is soft. Remove from the heat.
  4. Place the chickpeas in a food processor and process to a thick paste.
  5. Into a large bowl put the chickpeas, the fried onion and carrot, the thyme and the mustard. Season well with salt and pepper. Mix to a firm dough.
  6. Split the dough into 4 pieces. Knead a piece of dough in your hand for about 30 seconds then press it into a patty about 10 cm (4″) in diameter.
  7. Dip one of the hard-boiled eggs in some flour then place it in the middle of the patty. Work the dough around the egg to cover it completely, then work the ball in your hands for a further 30-40 seconds until smooth. Repeat for the remaining eggs.
  8. Dip each egg in turn into the beaten egg and then the breadcrumbs. Make sure there is an even coating of breadcrumbs on the egg.
  9. Deep fry at 180°C for 3-4 minutes until golden brown. Remove from the oil, allow to drain and cool.

Try to avoid any cracks in the dough before you fry the scotch eggs.

Scotch eggs are great for supper with some chutney, or cheese, or picalilli, or brown sauce, or mustard, or all of the above!
