Tuna Steaks with Onion Confit
Tuna is a delicious fish! One of the most amazing and simple things to serve with it is an onion confit.

  • 4 small tuna steaks
  • 500 g (1 lb) onions, very thinly sliced
  • 50 g (2 oz) butter or margarine
  • 125 ml (½ cup) alcohol-free red wine or unsweetened grape juice
  • 1 tsp sugar
  1. Melt the butter in a pan and fry the tuna steaks for about 3 minutes each side. Remove from the pan and put to one side.
  2. Add the onions in the pan and sauté for 5 minutes until the onions are browning and wilting.
  3. Add in the sugar, wine/grape juice, and season with salt and pepper.
  4. Mix, then press the onions down onto the bottom of the pan with a spatula. Cover and cook on a very low heat for 30-35 minutes.
  5. The onions should by now be sticky and may have caught on the bottom of the pan. If they are not like this, cook on a high heat for a further 2-3 minutes.
  6. Turn the heat to medium, place the tuna steaks on the onions, cover and cook for 5 more minutes to warm the steaks through.

Serve with a simple vegetable like green beans, broccoli or peas.
