  • 4 apples, peeled, cored and thinly sliced
  • 500 g (1 lb) pastry
  • 4 tbsp raisins
  • 2 tbsp sugar
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • Juice of ½ lemon
  • Grated rind of ½ lemon
  • Milk
  • Caster sugar
  1. Place the apples in a bowl together with the spices, sugar, raisins, lemon juice and lemon rind. Mix well
  2. Line an 8″ (20 cm) pie dish with half the pastry. Pour in the pie mixture.
  3. Use the remaining pastry to make a lid for the pie. Crimp the edges of the pie together. Make a few slits for steam to escape.
  4. Brush the pie with milk, then sieve on some caster sugar.
  5. Bake in the oven at 200°C for 15 minutes. Turn the heat down to 170°C and bake for a further 20 minutes.
  6. Allow to cool before serving.
