  • 6 sausages
For the gravy
  • 400 ml (14 fl oz) stock
  • 2 small onions cut into slices
  • 1 tbsp cornflour (cornstarch)
  • 2 tsp vegetable oil
For the Batter
  • 75 g (2½ oz) plain flour
  • 125 ml (4 fl oz) milk
  • 1 egg
  • Pinch of salt
  1. Prepare the batter: Sift the flour into a bowl and add a pinch of salt. Add the egg and mix well. Add the milk in thirds, beating well between each addition.
  2. Prepare the onion gravy: Heat 2 tsp of vegetable oil in a pan and sauté the onions gently for about 10 minutes until they are brown around the edges.
  3. Mix the cornflour with the stock and pour it into the pan. Bring to the boil with stirring, then simmer for 1 minute.
  4. Prepare the Toad in the Hole: Preheat the oven to 200°C/395°F. Brush a roasting tin or casserole dish (about 9″x7″, 22cm x 18cm) with vegetable oil and arrange the sausages in the pan.
  5. Bake the sausgaes for 10 minutes.
  6. Remove the sausages from the oven and immediately pour the batter into the pan. Return the pan to the oven and cook for a further 20-25 minutes until the batter has risen around the edges and is golden.
Titli's Tips
Make sure the pan with the sausages is hot when you add the batter as it will help the batter to rise.
