Sweet Potato and Red Lentil Soup
This sweet potato and red lentil soup recipe is hearty, delicious and extremely nutritious. It's so simple to make too!

Instructions
- Heat the olive oil in a pan over a medium heat. Add the onion and stir-fry until golden brown.
- Add the sweet potatoes, carrots, garlic, ginger, sweet chili sauce, coriander, black pepper and half the lentils.
- Add the water or stock and bring to the boil. Simmer gently for about 25 minutes or until the vegetables are soft.
- Turn off the heat and use a hand blender or food processor to whizz the soup until smooth.
- Add a cup of hot water and the remaining lentils. Season with salt.
- Bring back to the boil and simmer gently for 15 minutes to cook the lentils.
- Serve hot.
