Steak & Ale Pie
This proper Steak & Ale Pie recipe is easy to follow and gives a delicious, richly-flavoured Steak & Ale pie.

Ingredients
For the pie filling
  • 900 g (2 lb) stewing steak
  • 500 ml (20 fl oz) of ale, e.g. stout, Guinness, Theakston's OP...
  • 250 g (8 oz) mushrooms, roughly chopped (optional)
  • 2 onions, chopped
  • 3 carrots, roughly chopped
  • 2 beef stock cubes
  • 4 tbsp plain (AP) flour
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • 1 tbsp dried parsley
  • 2 tsp sugar
  • 1 tsp dried thyme
  • Ground black pepper
For the pie
  • 700 g (24 oz) shortcrust pastry
Instructions
Prepare the pie filling
  1. Heat 1 tbsp of oil in a pan. Add the meat and brown all over. Remove the meat from the pan with a slotted spoon.
  2. Dissolve two beef stock cubes in 250 ml (1 cup) of water. Pour any meat juices into the stock.
  3. Heat 1 tbsp of oil in the pan and sauté the chopped onions and carrots for 5 minutes or until the vegetables start to soften.
  4. Add the flour and cook for 1 minute.
  5. Add the juices, meat stock and the ale. Scrape the bottom of the pan to make sure nothing is sticking.
  6. Season with black pepper and mix in the sugar, thyme and parsley.
  7. Transfer to a casserole dish, cover and bake at 140°C/285°F fan oven, 160°C/320°F normal oven for 2-2½ hours.
  8. Remove from the oven and allow to cool.
  9. Heat 2 tbsp butter in a pan and sauté the mushrooms for 5 minutes. Add to the pie filling and stir well.
Prepare the pie
  1. Line a 25 cm (10") pie dish with half the pastry. Line with baking paper and pour in some baking beans.
  2. Bake at 180°C/360°F fan oven, 200°C/395°F normal oven for 15 minutes.
  3. Remove the paper and beans, prick the base with a fork and bake for a further 5 minutes.
  4. Spoon the pie filling into the case. Don't overfill - if you have any liquid left over you can use it to make gravy.
  5. Cover the pie with the remaining pastry and poke holes in the top to allow steam to escape.
  6. Bake at 180°C/360°F fan oven, 200°C/395°F for 40-45 minutes.
  7. Remove from the oven and allow to cool a little before attempting to serve.
Titli's Tips
You can make individual pies if you prefer. Serves with chips and peas or a selection of market vegetables. Oh, and you might like to rustle up a little gravy to pour over it too!
