Spinach Pancakes
These delicious pancakes can be served with feta cheese, black olives and roasted red peppers to give a satisfying supper.

Ingredients
  • 300 ml (10 fl oz) milk
  • 125 g (4½ oz) plain flour
  • 75 g (3 oz) spinach, finely chopped
  • 10 g (½ oz) butter or 1 tbsp vegetable oil
  • 1 egg
  • Pinch of salt
  • Vegetable oil for cooking
To accompany
  • 100 g (3½ oz) feta cheese, crumbled
  • 1 red bell pepper, roasted, peeled and sliced, or a few cherry tomatoes.
  • 30 g (1 oz) black olives
Instructions
  1. Sift the flour into a bowl. Mix in a pinch of salt then make a well in the centre.
  2. Add in one third of the milk and beat well. Add the remaining thirds, beating well in between to create a smooth batter.
  3. Beat in the egg, then melt the butter and beat that in too. Let the batter rest for 15 minutes.
  4. Add the spinach into the batter and mix well.
  5. To cook the pancakes add ½ tsp oil to a pan over a medium heat. Pour in ¼ of the pancake batter and quickly swirl it around to creat a circular pancake. Turn the heat up and cook for about 1 minute.
  6. Flip the pancake over and cook on the other side for about 1 minutes.
  7. Serve with the roasted red pepper, feta and black olives.
Titli's Tips
The mixture will make 4 pancakes and one serving is 2 pancakes.

The mixture doesn't flow as easily as normal pancake mixture because of the spinach, so to get a circular pancake it is important to work quickly when you pour the batter into the pan.
