Spinach Bhaji
There are many versions of Spinach Bhaji. This is a very simple version which takes no time at all.

  • 300 g (10 oz) spinach, washed
  • 1 small onion
  • 1 tsp garlic paste (or 1 garlic clove, crushed)
  • ½ tsp cumin seeds
  • ½ tsp garam masala
  • 2 tsp vegetable oil
  • 1 small knob of ghee or butter (optional)
  1. Put the spinach in a large pan with a small amount of boiling water. Cover and simmer for a few minutes until the spinach has wilted. Drain.
  2. Heat the oil in a pan over a medium-high heat and add the cumin seeds. Stir fry for 1 minute.
  3. Add the onions and garlic and stir-fry until the onions are golden brown (about 5 minutes).
  4. Add the garam masala and stir-fry for 30 seconds. Add the drained spinach and the knob of ghee. Stir-fry for 5 minutes before serving.
Titli's Tips
Remove any thick stalks from the spinach before you cook it – particularly relevant for large-leaved varieties. This is not highly spiced dish so goes well as a side dish for a Desi feast or is equally at home with a traditional roast dinner.
