Spicy Bean and Lentil Loaf
This Spicy Bean and Lentil Loaf is really easy to make and spicilicious. Goes great with a simple salad and will satisfy the most demanding of veggie appetites.

  • 400 g (14 oz) tin of red kidney beans
  • 400 g (14 oz) tin of lentils
  • 1 onion, chopped
  • 1 red capsicum, chopped
  • 1 stick of celery, thinly sliced
  • 1 large carrot, grated
  • 1 cup breadcrumbs
  • 1 garlic clove, crushed
  • 1 egg
  • 1 tbsp tomato puree
  • 1 tbsp tomato ketchup
  • 1 tsp cumin powder
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 2 tsp oil
  1. Heat the oil in a pan and gently fry the onions, celery and garlic for 5 minutes until soft.
  2. Drain the lentils and beans and place in a food processor with the egg and onion/celery mixture. Process until smooth.
  3. Put the smooth gunk into a large bowl, add in the remaining ingredients and mix well. Season with salt & pepper.
  4. Pour the mixture into a greased loaf tin, smooth it out and bake at 180°C for about an hour.
  5. Remove from the oven and allow to cool for 10 minutes before turning the loaf out onto a plate.

Serve with a crisp salad, or some steamed vegetables.
