  • 50 g (2 oz) halal salami or sausage, cut into pieces
  • 2 eggs
  • 20 g (1 oz) grated parmesan or pecorino cheese
  • 175 g (6 oz) spaghetti
  • Salt
  • Black pepper
  1. Add the spaghetti to a pan of boiling salted water and cook until al dente (about 7 minutes).
  2. While the spaghetti is cooking, break the eggs into a bowl and beat with a whisk. Mix in the cheese, season with salt and lots of ground black pepper.
  3. Warm the meat in a small pan until it starts to sizzle.
  4. When the spaghetti is ready, drain it and return it to the warm pan.
  5. Quickly add in the egg & cheese mixture, together with the meat. Toss and serve.
Titli's Tips
If you are a pork-eater, you should try and use pancetta or streaky bacon. Grill and remove the excess fat before cutting into pieces.

Once you have drained the spaghetti, work quickly so that the egg cooks on the hot spaghetti. Delicious with garlic bread.
