Sooji Halwa
Sooji halwa is a simple semolina-based halwa which is ideal for the sweet component of Halwa Poori Cholay. This is so simple that even your cat could make it!

  • 1 cup semolina
  • 1 cup sugar
  • A selection of mixed unsalted nuts and raisins
  • Salt
  • 4 tbsp ghee or vegetable oil
  1. Melt the ghee in a pan and add the semolina. Cook gently with stirring for 2-3 minutes.
  2. Add in 2 cups (500 ml) of water, the dried fruit and nuts, and the cardamom pods. Season with salt. Bring to the boil, cover and simmer gently for 5-10 minutes until it has the consistency of porridge.
  3. To serve, sprinkle with chopped fruit and nuts.

This dish is best served hot and fresh. It tends to “set” if you leave it.
