Sheer Payra (Afghan Milk Fudge)
Sheer Payra is an Afghan milk fudge flavoured with nuts, rose water and cardamom. Serve with tea or coffee.

Instructions
- Put the sugar and water in a pan and bring to the boil. Simmer to thicken the syrup.
- Remove from the heat and add the rose water, cardamom, nuts and milk powder. Mix well.
- Pour the hot fudge into a greased tray or dish. Sprinkle on some chopped pistachios and leave for about an hour to cool.
- When the fudge has gone cold cut it while still in the tray by drawing a knife through it.
Titli's Tips
The syrup should be reasonably free-flowing and clearly syrupy. The best description would be like warm honey.
